Romanian style meatballs


Here you go another secret recipe from my wonderful wife Violet – Romanian style meatballs.

Ingredients:

  • 1 lb ground beef
  • 1 onion chopped very fine
  • 1 zucchini finely grated
  • salt
  • paper
  • 1/2 bunch of dill
  • 1/2 bunch of parsley
  • 2 eggs
  • 6-8 garlic cloves

Directions:

Mix all the ingredients together in a bowl until everything is homogenized. You can form the meatballs in different shapes and sizes – balls, flattened balls, smaller, or bigger. I prefer them big and flattened as are faster to make and easy to flip when cooked. In a large pan heat the oil on medium-high and then fry the meatballs until fully cooked.

In my opinion, the perfect match for side dish is mashed potatoes and some salad or pickles. For the mashed potatoes, you can use 6-7 boiled Yukon gold potatoes, 2-3 tsp of butter, 2-3 tbsp of sour cream and add milk while mixing with a mixer until the desire consistency is reached (I used 1/2 cup). I know, I know! Millions of calories! But it’s so goooood!
