Another amazing soup found on Soup Chicks website. For a better taste, I’ve roasted the butternut squash for 20-25 minutes in the oven at 400F.
I know, I know! You can see my chandelier in the pictures. Oops!!

I made a nice one the other week – added in some garlic, some Thai laksa paste and coconut milk. Was more like a dessert than a soup!
