For the beans lovers, this is a true heaven. The taste is really amazing even if the recipe can be altered in so many ways – different beans or onions, etc. The recipe was adapted from the package of “GREEN GIANT – VALLEY SELECTIONS – LIMA BEANS”.
Ingredients:
- 2 tsp chili powder
- 1 tsp ground cumin
- 300 g lima beans
- 270 grams (1/2 can) black beans, drained, rinsed
- 199 grams (1 can) “Selection” corn
- 1 big field tomato, chopped
- 1 medium size onion, chopped
- 1 medium avocado
- 1 tbsp extra virgin olive oil
- 2 tbsp balsamic vinegar
- 2 tbsp Sriracha sauce
- salt and pepper to taste
- chopped fresh cilantro
- chopped dill
Combine lima beans, black beans, corn, tomatoes, onion and avocado. Add chili powder, cumin, pour oil and vinegar over salad and gently toss. Sprinkle with cilantro, if desired.
