Winter dried fruit cake

Another recipe from my wife Violet.

  • 5 eggs
  • 1/2 cup melted butter
  • 1 cup sugar
  • 200 g walnuts
  • 100 g dried apricots
  • 500 g mix dried dates, cherries, blueberries and cranberries
  • 1 ½ cups flour
  • 14 grams of baking soda
  • ½ tsp. salt
  • vanilla, orange and lemon zest
  • rum extract

Preheat oven to 300 degrees F, before you start making the cake mixture. Separate the eggs; by using an electric mixer beat the yolks with sugar and vanilla, slowly incorporating the shortening; set aside. Beat the whites until well-founded.

On a separate mix bowl combine dried fruits (cut into small pieces) with coarsely crushed walnuts, orange/lemon zest, rum extract, half of the flour and baking soda. Stir in dry ingredients adding alternately the yolk, whites and the rest of the flour. Mix well and place in 2 pre-greased baking pans. Bake cakes for approx.. 40 minutes or until tester or a toothpick inserted into center comes out clean. Cool in pans 10 minutes, turn cakes into racks; cool completely. Cut into slices and ENJOY!
