My wife loves eggplant of any kind and cooked in any way so I’ve picked two totally different recipes, one Italian style and one Japanese. The first one is from Chef Gianni repertoire and the Japanese style is inspired from Chanie’s blog.

I think I’d prefer the baked. It looks delicious.
I also am a big fan of eggplants, called aubergines over here! I have grwon them myself from seed & have grown them in larger containers! Home grown is best! I prefer the 1st tasty recipe! I am not a big miso fan at all! 😦
Eggplants with miso may sound weird, but the taste is awesome.
Maybe I am brave enough one day,…:)
