Lemon and spices trout


Another recipe from Chef Doru – whole trout with lemon and spices baked on the  BBQ.

Ingredients:

  • 3 whole trout
  • 1 lemon
  • salt
  • paper
  • salmon spice
  • 8-10 garlic cloves

Directions:

Wash the trout and pat dry with paper towel. Season the fish with salt, paper and salmon or fish spice then add the garlic and lemon cut into thin slices. Place the aluminum pan on the BBQ heated at 350F until the fish is fully cooked. As a good Romanian, I ate the fish with “mamaliga” or polenta.

Sake-steamed sea bass


  • 3/4 cup sake
  • 3/4 cup bottled clam juice
  • 1 tbsp minced peeled ginger
  • 3 garlic cloves, flattened
  • 3-4 pc of 150 g sea bass fillets
  • 2 large green onions, chopped
  • 4 tsp soy sauce
  • 1 tsp sesame oil
  • 3 tbsp chopped fresh cilantro
  • 2 tsp toasted sesame seeds

Combine sake and next 3 ingredients in large skillet, bring liquid to boil, reduce heat and simmer for 5 minutes. Arrange fish on rack and sprinkle with salt and pepper. Place rack in skillet. Top fish with onions, drizzle with soy sauce and sesame oil. Cover skillet; steam fish until opaque in center, about 5-7 minutes. Remove steamer rack and mix cilantro into juices in skillet. Spoon rice on plates and top with fish, juices from skillet, and toasted sesame seeds.
