Rice pudding


This is my wife’s recipe and all our family loves it.

Ingredients:

  • 1/2 cup of long grain rice
  • 2 cups of milk
  • 1/2 tablespoon of butter
  • 1/3 cup of sugar
  • 1/2 teaspoon of nutmeg, cinnamon
  • 1/2 teaspoon of salt
  • 1/3 cup of raisins
  • 1 apple,
  • 4-5 spoons sugar
  • 3 eggs

Directions:

  1. Bring 1.5 cups of milk to boil in a medium sauce pan add rice and stir
  2. Reduce heat and simmer for about 20 minutes; cook this mixture on medium heat until it is nice thick and creamy – about 15 minutes; Stir in the remaining ½ cup of milk; Remove from heat and then stir in the butter and vanilla; beat eggs separately and add to the mixture after cooled down a little
  3. In another sauce pan make caramelized sugar and put over apples previously sliced into a medium dish that was covered with butter. Add all mixture of rice over caramelized apples and put in the oven for 30-40 minutes, or until golden-brown. When ready sprinkle nutmeg, cinnamon-serve warm
